In April last year, founders Raffaele Persichetti and Martin Gordon Brown opened the doors to Holloway Restaurant, showcasing an a la carte menu of world cuisine. Housed inside a lovingly restored 1930s building on Hardgrave Road, the boys have made the space their own, staying true to the design aesthetic of Holloway’s eyewear and watch collections. Custom-made lampshades crafted from recycled specs hang from the ceiling, casting a curious shadow over the jumble of native tree slices, rose petals and stones that comprise the floor, and diners can browse the extensive design collection while munching on fresh fare.

Expanding from the success of the restaurant, Holloway has just added a new component to the space – Pizzartist. On evenings from Wednesday through to Friday, Holloway Restaurant transforms into a gourmet pizzeria serving up an ever-changing selection of woodfired pizzas. Pizza bases are made using 5000-spelt grain – the ancient grain used by the Egyptians and the Romans – and topped with local produce and vegetables and herbs from Holloway’s own garden. The menu will change seasonally, but expect to find selections such as the Ocean Flower with zucchini, red onion, chilli, garlic, anchovy and mozzarella; and La Mama with tallegio, kale, parmesan, mozzarella, garlic and truffle. You can pair your pizza with a dish from the Market & Garden menu, including delights such as caprese salad, eggplant parmigiana and house ravioli, and finish off with a moreish dessert pizza.
