Often holding cookouts with his American friends, Nick Black has a strong appreciation for the classic barbecue delights of the States. Tired of being unable to get proper American fare on the north side, Nick took matters into his own hands, opening Pit Boss American BBQ & Eats in Newmarket late last year.

As you drive down Enoggera Road, it is hard to miss Pit Boss American’s large sign bearing its mascot – a patriotic pig taking the reins over a barbecue. Although predominantly a takeaway joint, Nick has used the space well to accommodate those looking to dine in, including an outdoor courtyard area framed by a white picket fence. Inside, a large screen rotates through episodes of Man v. Food and BBQ Pitmasters, preparing your tastebuds for the American fare they are about to experience.

The name says it all – you can guess what you are in for when you dine at Pit Boss American BBQ & Eats. Barbecued meats are the specialty, and each cut is handled with care. Both the ribs and pulled pork shoulder marinate overnight after being rubbed with Pit Boss American’s signature spice blend – the pork shoulder is also injected with apple juice for extra juicy flavour. The team then smokes the meat low and slow in its in-house smoker, using a blend of apple, hickory and mesquite wood chips. Ribs and pork are served with fries and house-made slaw, or those after a true American barbecue feast can opt for a pack, which also includes cornbread. Pit Boss American also dishes up Southern fried chicken and wings, buffalo wings, and a selection of fries – think chilli cheese fries topped with house-made Texas chilli, melted cheese and a side of sour cream – and other sides. Share a couple of slices of pie for dessert, choosing from pumpkin, key lime, peanut butter and cherry.

If your taste for America goes further than just food, you can head to Pit Boss American to celebrate a number of US holidays and events. First up for the year is its Super Bowl party on February 2, where the game will be shown on the big screen and Pit Boss will launch its new menu.
