Olé Fuego fires up the paella pans in Indooroopilly

South Bank favourites Olé and The Sangria Bar welcomed a third addition to the familia this week, with Olé Fuego capturing the essence of a Spanish cantina in Indooroopilly.

The flames are shooting skyward and the paella is dancing about in the pans, meaning it’s almost time for Indooroopilly Shopping Centre’s newest addition to open its doors. Olé Fuego is set to join the ranks of Nantucket Kitchen & Bar, Harajuku Gyoza and Nitrogenie, who have all made themselves at home in the centre’s chic new dining precinct. In keeping with the Spanish traditions of South Bank venues Olé and The Sangria Bar, Olé Fuego will offer a range of zesty tapas dishes, complemented by its famous jugs of sangria. Harnessing the buzz of a traditional Spanish cantina and teaming it with rustic-chic interior design from Brisbane firm Arkhefield, the new Indooroopilly bar and restaurant is a fortunate coup for western suburbs residents.

Stepping into the lively space, it’s clear that paella takes centre-stage, with giant paella hoods greeting guests upon entry and an open kitchen beckoning from beyond. Open seven days from 10:00 am to late, the indoor-outdoor dining space lends itself to daytime feasts and evening tipples. Tapas dishes meander from fried calamari with aioli and fresh lemon to slow-cooked crispy lamb belly with ajo blanco and roasted grapes, while raciones offer up tiger prawns with jamon serrano, garlic and chilli pil pil, and confit duck with sautéed mushrooms, sherry, shallot puree and kale. If you’re after a bit of theatre in the open kitchen, opt for the paella for two embedded with your choice of fresh seafood morsels, chicken and chorizo, or vegetables. A large selection of Spanish wines and beers are complemented by those from France, New Zealand and Australia, while the famous Olé sangria concoctions are available by the glass or jug.
