New cafe Moose & Gibson opens in Woolloongabba

The research required for some ventures is often enviable, which is the case for new Woolloongabba cafe, Moose & Gibson. While refining the concept for their new cafe, Danielle and Malcom Watts of Tarragindi’s Leaf Espresso Bar, along with business partner Scott Higginbotham, tripped south to Melbourne to spend their mornings in the city’s many clandestine cafes.

The end result is a cafe with an industrial edge that is tucked just off the main drag of Logan Road in Woolloongabba. Various natural textures such as polished concrete floors and wooden tables along with a timber bar, exposed copper pipes and a vertical garden create the industrial feel, with not a plastic element to be seen. Take a moment to glance up, and you’ll spy a large antler light that plays on the name of the cafe.

Moose & Gibson has launched with an all-day breakfast menu that is served until 2:00 pm, along with a selection of sandwiches and cakes and Two Seasons coffee. Menu items include buttermilk pancakes with lemon butter syrup and caramelised banana, as well as the mighty mad moose feast, which comes with eggs, garlic mushrooms, spinach, bacon, black pudding, beans, croquette, tomato and toast.

A lunch menu is in the works, and plans of opening for dinner service pending a liquor-licence approval are also brewing. Once the wine list is up and running, the cafe’s mezzanine will be transformed into a vast wine rack and will also double as a potential spot for live musicians to strum a gentle tune.
