Two brothers have opened up a flashy new brunch and lunch location with the explicit goal of creating tasty morsels and tasteful memories.

Situated next to The Brisbane Club, just a stone’s throw from Post Office Square is Jabiru – a new venue that blends a modern aesthetic with downright delicious dining. Jabiru is the name of a town situated in Australia’s heartland, Kakadu National Park, which is a space that epitomises the beauty and diversity of Australia. Damian and Simon Cootes are the two minds responsible for the concept and operation of Jabiru – the duo have years of experience between them in the food industry, having worked abroad and around Australia. Seeking to bring a connectedness and conversation to the food we consume, the brothers have concocted a well-travelled menu of dishes ranging from classic Australian cuisine to meals that draw upon Asian, European and Middle Eastern influences – celebrating the beauty and diversity of contemporary Australia.

Damian and Simon haven’t skimped on the menu, which caters to breakfast and lunch eaters with equal care. Simon has taken on head chef duties, drawing upon previous experience at Windsor Castle and other venues for the role. Arrive early and sit down to a plate of decadent Belgian waffles with berry compote and vanilla bean creme fraiche or tuck into some ham hock baked beans with poached eggs. Come back at lunch and feast on a selection of succulent pulled pork sliders with spicy apple slaw or rosemary salted scotch fillet of Kilcoy black angus with kipfler potatoes and lemon and avocado butter. Jabiru offers share plates for dinner diners, with a full dinner service to come in the near future. The bar has been fitted with beer taps pouring the likes of 4 Pines, Stone & Wood and Asahi, with bottled varieties, wine and spirits available for those looking to take a long lunch.
