If Hawkeye, Hot Lips Houlihan and Radar were looking for a place to get a little R&R during the Korean War, where would they go? Our guess is a sexy little Korean bar, where the food is good and the drinks are strong – something a little like Caxton Street’s latest resident, Ginger’s.

Ginger’s is the latest creation from restaurateur Jamie Webb – the clever cat behind such venues as Lefty’s Old Time Musical Hall, Sonny’s House of Blues and Gordita. When Jamie was living in New York one of his favourite dining spots was Dok Suni’s, a non-barbecue Korean restaurant with home-style eats and an ultra-cool vibe (and famously also a favourite of Quentin Tarantino). Something about Dok Suni’s always stuck in his head, so when the space next door to Lefty’s became available, he decided it was time to bring his Korean-style musings to life.

Jamie’s inspiration behind the fit-out was simple – where would the characters of M*A*S*H like to hang out on their days off? The result is Ginger’s, a dimly lit and intimate diner and bar finished with booth seats, leather stools, exposed-brick walls and oriental wallpaper. Motown music sets the scene, and the voluptuous Ginger is immortalised on the concrete floor, welcoming you in with her sultry look. Ginger’s Asian-influenced cocktails are equally enticing, with names like the Flame of Love Martini, Korean Night and Seoul Sojourn. If you need some extra convincing, their descriptions will certainly draw you in ­– take the Yuzu Mule for example, that reads, ‘yuzu is an aphrodisiac, a mule is a workhorse. Go figure’. On Ginger’s Korean-style menu you’ll find kick-ass bar snacks such as kimchi crepes with sesame and soy dressing, and cured ocean trout on puff cereal with radish soy dressing. Small bites include fried chicken with hot and sweet sauce or beef short ribs with edamame and horseradish, which can be paired with larger dishes of mushroom or pork bibimbap or braised pork bo ssam.
