Couverture & Co. opens in Red Hill

Red Hill locals who have been greedily peeking through the windows of the Couverture & Co. cottage over the past few months can now get their cocoa fix, with the store officially opening last weekend.

Chocolate is a dish best served cold, and often. Fortunately for Brisbane sweet-tooths, new boutique chocolatier Couverture & Co. is making this maxim possible with an endless supply of quality handmade provisions. After taking over the historic space on Enoggera Terrace, owner Jessica Brookes spent several months tweaking her recipes to create a drool-worthy list of flavour combinations. Think tart cherry with dark chocolate Marsala ganache, chewy caramel with Murray River salt in milk chocolate, and layers of caramel and banana cream dipped in chocolate.

Step by step, the former gift shop was transformed into a chocolatier. The kitchen went in, the Marimekko cocoa pod wallpaper went up and the bronze signage etched Couverture & Co.’s arrival in the minds of passing chocoholics. The result was certainly worth the wait, with all morsels handmade on-site using the finest Belgian Callebaut chocolate. Jessica’s path to chocolate-maker was anything but typical – the former journalist spent several years in the Middle East before returning home pining for a career change. The gifted baker turned her interest to food, and earned her chocolate-making stripes under the guidance of Melissa Atkinson from Bittersweet at The Barracks. The store’s closure last year prompted Jessica to search for her own space to continue bringing handmade couverture chocolate to the gourmands of Brisbane.
