Indulge in a sweet breakfast of churro pancakes

The marriage of sugar and cinnamon has long been a union championed by Mexican churros, with the three elements forming a moreish gastronomic match. Churros can, however, be fiddly to make, so we’ve unearthed an easier alternative in the form of cinnamon-slathered churro pancakes. If you are feeling like a little extra indulgence, drizzle melted dark chocolate over the pancakes just before serving.

INGREDIENTS

2 cups plain flour
2 teaspoons baking powder
2 eggs
1 1/2 cups buttermilk
1/2 teaspoon vanilla extract
pinch of salt
1 tablespoon butter

Churro topping
1/2 cup sugar
4 tablespoons cinnamon
1/3 cup melted butter

TO MAKE

Mix the sugar and cinnamon for the pancake topping in a bowl and set aside.

In another bowl, mix flour, salt and baking powder to create the base of the pancake mixture.

In a third bowl, beat the eggs and add the buttermilk and vanilla extract. Once these are mixed, pour the mixture into the bowl of flour, salt and baking powder, and stir with a metal spoon to combine.

Heat up a frying pan and add some of the butter. When the frying pan is hot, ladle the batter into the pan (enough so that you have a nice thick pancake). Flip when bubbles start to form on the top side of the pancake.

Once all of the pancakes are cooked, dip them into the melted butter and then generously sprinkle both sides with the cinnamon sugar mixture. Serve immediately and drizzle with chocolate or maple syrup if you so desire.
