Cayenne Kitchen & Bar opens in Paddington
Daniel Alvers’ love of food has always been strong. Working in IT for years, he continually felt the urge of the food industry pulling him away. Five years ago he started his plan to open a restaurant, and after completing his chef’s apprenticeship under the guidance of some of Brisbane’s top chefs, Daniel now has a venue to call his own – Cayenne Kitchen & Bar.
When considering a name for his Given Terrace restaurant, Daniel decided on his favourite spice – cayenne – as it has a distinct flavour yet is incorporated in many different cuisines from all over the world. With this in mind, Daniel gives his bistro-style menu a similar bent, adopting flavours and inspiration from a variety of cuisines including American, Spanish, Mexican, Thai and French. The menu is broken up into four sections distinguished by a number of ‘noms’. Small dishes (one nom) include ham and cheese croquetas with bravas sauce, Thai corn fritters with tomato relish or home-baked mini load with olive oil and balsamic or whipped butter. Nom noms step it up a notch, with prosciutto-wrapped baked figs with blue-cheese sauce, an American-style cheeseburger with fries or spaghetti pomodoro with prawns, goats curd and basil. Cayenne Kitchen & Bar’s mains earn three noms, with choices such as build-your-own spaghetti with three pestos, slow-braised pork belly with white bean puree and orange ginger slaw, or crispy-skinned barramundi on coconut quinoa with a red curry sauce. And to accompany your meal? Noms on the side, of course.
Daniel worked closely with the restaurant’s designer to create an open kitchen, allowing diners to sit at the pass and watch the kitchen in full swing. If you’d rather the bright lights of the city, perch on a window seat with a perfect view of the Brisbane City skyline. Those looking to wet their whistle can take a seat at the bar, choosing from a range of local and New Zealand wines, as well as Green Beacon Brewing Co beers on tap.
